The Heart of the Kitchen: A Partnership in FlavorWhile Balbir was the face of the journey, the soul of the menu was a partnership. Much of the culinary magic at Balbir’s—particularly our celebrated vegetarian dishes—stems from the private kitchen of Balbir’s wife. Her deep understanding of traditional home-style cooking brought a lightness and authenticity to the menu that set it apart from the rest. To this day, these recipes remain unchanged, honoring the family traditions that have sustained us for five decades.
The Story of the Original ChasniMany have tried to replicate it, but the Chasni started with Balbir. Over 40 years ago, Balbir set out to create a dish specifically to tempt his young son’s palate—something smooth, sweet, and perfectly balanced. What began as a father’s kitchen experiment soon became a Glasgow legend and, eventually, a staple in Indian restaurants across the country. Today, we are proud to serve the Original Chasni, prepared exactly as Balbir first envisioned it.
